Simple Homemade Granola
Ingredients:
- 12 cups oats (I used Bob's Red Mill Gluten Free Whole Grain Rolled Oats)
- 4 cups unsweetened Coconut Flakes (I used one package of these)
- 6 cups of raw nuts and seeds (I used 3 cups of almonds, 1 cup of walnuts, 1 cup of pecans, and 1 cup of sunflower seeds)
- 1 cup coconut oil
- 1 cup honey
- optional: 3 cups of raisins or other dried fruit, add after baking
Directions:
1. Preheat over to 350°F.
2. In a small saucepan over low heat, mix together the coconut oil and honey.
3. In a large bowl combine oats, coconut, nuts and seeds.
4. Pour coconut oil and honey mixture over dry ingredients and stir very well to coat. Divide onto three baking sheets.
5. Bake for 10 minutes; remove from oven and stir. Place back in oven but remove and stir every 5 minutes or so until the oats are golden brown (approx. 30 minutes).
6. Cool; add raisins or other dried fruit.

I'm glad you shared this recipe, because I have one that calls for canola oil and was planning to sub coconut oil next time I make it. So I'm glad to know it works in a granola recipe. I bet it's so yummy!!

I just got back from a meeting with a bunch of moms talking about how important it is to have breakfast, especially our little ones. And we shared a bunch of recipes for granola, granola bars and granola cookies! Guess what I'm going to be making this weekend? ReplyDeleteWhile we're on the skirt topic, I'd love to wear them more often, but how do you wear them in the winter? I'm always cold and live on Northern California (San Francisco Bay Area). What do you wear to keep those lovely legs warm? =)
ReplyDeleteI was born in Alameda! My dad was stationed there for awhile when he was in the Coast Guard. :) About wearing skirts in winter, I freeze if I don't wear warm tights and boots with them! I ended up changing into one of my new skirts after my Hubby gave it to me on Tuesday, before heading to town, and wore it with some extra thick black tights and knee high black boots. I stayed plenty warm and it was cold... even started to snow again on our way home!

And yes it doesn't get as cold as where you live now, but you're talking to a latin girl here =) I was born and raised in Peru, so I'm a hot climate kind of gal ;)thanks for the tip! I guess I'll be doing some shopping after this baby comes (technichally in about 5 weeks, but it feels more like yesterday ;)

okay... Here is the other counter which was carefully excluded from the pictures yesterday... Now maybe I will be motivated enough to get all that stuff, which has been sitting there for at least a week, put away! :)

ReplyDeleteThanks so much for the granola recipe! We've been wanting to make a batch for a very long time and this looks right up our alley. One question: any suggestions for substituting the coconut--since there's so much of it--we're not big fans of it.

I would either just leave it out, or substitute it with a mix of more oats and nuts/seeds. My oldest doesn't like coconut either, but he is liking this granola. I think it might be the difference of using the unsweetened coconut flakes and toasting them, versus the sweetened shredded coconut un-toasted, which he can't stand.

Thank you CeAnne! We were very blessed to be able to pull together the remodel/addition on a small budget. Our contractor was amazing and we were able to get some really great deals on just about everything. It was so stressful choosing everything, and hoping it would all go together, but we have been so happy with the results. :)

DeleteWe made the John the Baptist granola from Catholic Cuisine the other day, without the raisins or nuts (b/c husband is terribly allergic to tree nuts and I don't like raisins) and it was such a hit. I think the kids and I finished it that afternoon. This recipe looks like another great option. Thanks for sharing!
