Baking Paska {Recipe: Basic Paska for Easter}

While the Paska was baking we molded another little Easter Lamb out of butter!


Every year (at least for the last four years) I have said "Next year we will definitely make a new Paschal Candle!"
... and every year I end up scraping off the last digit of the year and reshaping it into the next number.

My parents celebrated their 40th Anniversary on Easter Sunday this year so I offered to host the party at our home, despite all of my pregnancy challenges. Between our trip to the coast and Redwoods last Sunday-Monday, working most of Tuesday-Wednesday combined with keeping up with our school week, and out-of-state friends visiting Thursday-Friday I hadn't had any time to prepare ahead of time this year. I finally made it to Costco and the grocery store late Friday evening and was so grateful to have help in the kitchen on Holy Saturday! Some of our children started coming down sick on Easter Sunday, but we still had such a nice day and I'll be back with more pictures soon. Happy Easter!

Celebrating the Solemnity of the Annunciation {Swedish Waffles and AIP Waffles for Lady Day}

St. Patrick's Day, St. Joseph's Day, my husband's birthday, and now the Annunciation... So much to celebrate lately and it's been a nice little break right in the middle of this year's lenten season. Tonight we are headed to the boys' end-of-season team party and award ceremony for hockey, so we celebrated today's feast with a special brunch. The main food associated with today's feast is waffles! 

"This is Våffeldagen or Waffle Day in Sweden. One website said the name Vaffla, meaning waffle, originated from Var Fru, Our Lady, and that in time the two words became slurred and corrupted, first into Vaffer, then to Vaffla. The waffles are served with whipped cream and lingonberries (or cloudberries)... " You can read more in Jenn's post on Lady Day Feasting over at Catholic Cuisine. 

A couple years ago we made these delicious Organic 6-Grain Waffles using a Belgian Waffle Maker. I posted the recipe over at Catholic Cuisine yesterday. This morning we made the thinner Swedish style waffles, using our heart shaped waffle maker, topping them with marionberries once again! I wish we would have had some whipped cream to go along with them... Next year!


Lady Day Swedish Waffles

Ingredients:
  • 3 1/2 oz butter
  • 1 2/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups plus 3 tablespoons milk
  • 2 eggs

Directions:

In a bowl or blender (I used my Vitamix) whip together flour, baking powder and salt with half of the milk until you have an even batter. Pour in the rest of the milk, eggs and the melted butter, whip until thoroughly mixed.

Heat the waffle iron and brush with butter. Pour in 6 tablespoons of batter and bake until golden brown. Makes 8 waffles. Top with berries. (Lingonberries are traditional in Sweden. We used Marionberries in honor of Our Lady!)

After baking waffles for everyone else, I was really craving a waffle too... I decided to try to adapt an AIP Belgian waffle recipe to use with our waffle maker and the Cassava Flour I recently purchased. It turned out great! I'll definitely be making these again.


Autoimmune Protocol Waffles for the Annunciation
{gluten-free, grain-free, sugar-free, egg-free, dairy free, nut-free, seed-free}
Vegan, Paleo-friendly, AIP-friendly, and still delicious

Ingredients:

Directions:

In a large bowl, combine all of the dry ingredients and mix well.

Place all the wet ingredients in blender (I used my Vitamix) and blend until well combined. Add dry ingredients and blend again until well combined. The batter will be thicker than pancake batter but should still be pourable. You may need to add a little additional water or coconut milk.

Lightly brush waffle iron with coconut oil. Add about 1/3-1/2 cup of batter to your pre-heated waffle iron and cook until done. I use this waffle iron, preheated and very hot, with setting number 4.


The recipe yields 5-6 Swedish style waffles, using approximately 1/3-1/2 cup of batter for each waffle.  Be sure to cook the waffles long enough or they can turn out gummy.



Top with marionberries. Next time I'll make some Coconut Whip too! Serve immediately or store in the refrigerator and reheat in the oven.

The boys requested Irish Beef and Guinness Stew and Traditional Irish Soda Bread with Kerrygold Irish Butter for this year's celebration ☘ I served it a day late since St. Patrick's feast fell on a Lenten Friday this year, plus they were gone all of St. Patrick's Day for their first golf tournament of the season!

Christ be with me, Christ within me,

Our kids decided that our annual Shamrock Cinnamon Rolls (also pictured here) were too much of a "dessert" (which they choose to give up this lent - the older kids saved the St. Patrick's Day candies I gave them too) so I put them back in the fridge on Friday and made them for our Sunday brunch instead! ☘

Honeycomb Cake on the Feast of St. Ambrose


Today my little ones helped bake a Honey Bun Coffee Cake in our Honeycomb Pull Apart Cake Pan for after dinner in honor of the St. Ambrose, the honey-tongued doctor. 

Legend says that when St. Ambrose was a baby, a swarm of bees flew in the window and clustered around his mouth, indicating that he would grow up to become a famous writer and speaker, one whose words would be as sweet as honey. 

He is the patron saint of beekeepers, bees, and candlemakers.

Celebrating the Saints :: Saint Andrew Cupcakes


Today is the feast of St. Andrew! We had a very full day today, between co-op classes for all the big kids and an afternoon at the office for the three little ones and I, but we had another nameday to celebrate! On the way home this evening we stopped at our local market for eggs, a can of Marshmallow frosting, and some Fudge Brownie Goldfish Grahams so we could decorate some cupcakes for this special feast. (We already had a box of cake mix and some Trader Joe's Honey Wheat Pretzel Sticks in the pantry.) I simply stuck two pretzels into each cupcake at an angle to create an X shaped cross and added a few fish grahams to the base. So simple to decorate and I loved how they turned out!


Our little guy loved his two nameday surprises: St. Andrew the Apostle from Naturally Catholic and his very own St. Andrew Chaplet from Mary Devotions.


Dearest Patron, St. Andrew the Apostle, in baptism I received thy name and was put under thy special care. Oh, teach me to be like thee! Help me to avoid sin and to practice virtue. Be always at my side to guide me and protect me, and bring me safe to Heaven, that I may be ever happy with thee in the presence of God.
